Arabica plants thrive in soils located between 1000 and 2000 meters above sea level: the higher the plant grows, the better the organoleptic qualities of the beans. Farmers Our arabica coffee is organic and Fairtrade and is produced by Cooperativa Norandino in Peru and Prodecoop in Nicaragua. Harvesting and processing The harvesting of the ripe fruit (called cherry) takes place in the dry and less rainy periods of the year. Cherries contain two paired grains, surrounded by a protective membrane (the parchment). Our coffee is processed using the wet method, which guarantees quality and value to the coffee, avoiding in most cases the need for subsequent interventions to correct defects. The green coffee is subsequently dried, slowly roasted and subsequently air-cooled and ground, in order to obtain an absolute balance in the cup capable of enhancing its aromas".
